Ingredients

  • 4 Butchery Kitchen fresh chicken breasts (these will easily feed a hungry family of 4-6, with second helpings all round!) - cube these with fat removed

  • 1 x pot of JD Seasoning CHINESE CHICKEN CURRY

  • 2 onions, roughly chopped,

  • 2 carrots - peeled & diced,

  • 2 courgettes, roughly chopped,

  • 1 green pepper, de-seeded and chopped,

  • 2 tbsp tomato puree,

  • 2  tbsp soy sauce, small cube of grated ginger,

  • 2 cloves garlic, peeled and finely chopped,

  • Spring onions chopped for garnish,

  • Parsley sprig (optional)

  • 700ml vegetable stock

  • Good quality Olive oil 

  • Boiled rice to feed 4-6 hungry folks

  • A sturdy cast iron/stainless steel pan

CHINESE CHICKEN CURRY - THE story

Just as Stan would be a bit lost without Ollie, great tasting, high quality meat needs super crisp, super fresh fruit & vegetables to turn it into a truly great family meal.

So teaming up with our great friends at HomeFresh Foods made perfect sense for us as we set out to work our way through the range of simple curry recipe ideas from one of our spices & seasoning partners JD Seasonings.

JD had sent us a wonderful CURRY BOX of 11 different seasoning pots, from Balti & Jalfrezi through to Crazy Hot Curry, and in the spirit of always trying out our partners products for taste and quality reasons,(as well as a good excuse for a hearty scoff), we got together with the HomeFresh team and randomly selected the Chinese Chicken Curry seasoning pot to make a delicious family meal that will easily feed a hungry family of four. Ignoring the totally unwarranted Laurel & Hardy kitchen buffoonery quips from the office, it's worth explaining the idea behind our ‘Carry On Cooking’ series with HomeFresh:

our shared idea is for us to make it “as simple as possible for as many people as possible to enjoy the best meal possible through the simplest cooking possible EVERY NIGHT”.

We know our customers and their families have busy lives, so trying out different ways to simplify the preparation & cooking of a super tasty family meal is central to ensuring our customers fully enjoy the great meat, poultry,  fruit and vegetables we deliver to their door.

Chinese Chicken Curry Recipe (watch the video)

Large cooking pan onto low-medium heat, add olive oil half the chopped onions, all chopped courgette & carrots and gently fry for 4-5 minutes until soft, add garlic & ginger and cook for a further minute then add the JD Seasonings Chinese Chicken Curry pot, tomato puree & soy sauce and mix well. Pour in the vegetable stock and simmer for 20 minutes.

At this stage the recipe suggested we blend this until smooth, but we went for a more rustic version and mashed it up a little with a fork/masher - it was great so completely up to personal taste we reckon.

In a frying pan over medium heat, add olive oil and add cubes of fresh chicken and gently fry until browned on all sides,  add the peppers &  remaining onion, cook for 3-4 minutes.

Add sauce from your first pan (or blender) cook for a further 5 minutes - gives you time to prepare the rice. Once chicken & sauce warmed through and rice plated, serve and enjoy - spring onion & parsley sprig  garnish works a treat our chef told us!! Very professional.

RESULT:

A deliciously fresh and tasty family curry, seasonings and flavours were great, we think its a perfect mid week  healthy family meal, with enough left over for a second helping and best of all it took us around 45 minutes of kitchen effort.
