Cooking With Kirstie - TURKEY TACOS
Our friend Kirstie of KirstiesKitchen fame, has been trying out a wide selection of our fresh produce over the last few weeks and has been putting together some amazing meals and recipes which she shares on with her cooking community on Instagram. We are delighted to be able to share a selection of her recipes with you all.
Turkey Tacos
Serving suggestions - rice, taco shells
Ingredients
Olive oil
Medium onion
2 cloves of garlic
½ teaspoon of ground coriander
½ teaspoon of ground cumin
1 teaspoon of hot chilli powder
Small tin of chopped tomatoes
1 tablespoon of apple cider vinegar
fresh lime
fresh oregano
500g of turkey mince
little gem lettuce
plum tomatoes
avocado
feta
soured cream
Method
Add a splash of olive oil to a large non stick frying pan, heat until hot
Dice one medium onion and crush two cloves of garlic and add to the hot pan. Cook until soft
Add in 1/2 teaspoon of ground coriander, 1/2 teaspoon of ground cumin, 1 teaspoon of hot chilli powder, salt and pepper and stir until the onion is coated
Add turkey mince and brown, use a wooden spoon to break up any clumps of mince
Add a small tin of chopped tomatoes, one tablespoon of apple cider vinegar, juice from half a fresh lime and some fresh oregano and simmer for 5-10 minutes until thickened
Serve with coriander, sweet gem lettuce for the taco shells, chopped tomato, avocado and feta and some soured cream
