COOKING WITH KIRSTIE - ONE TIN CHICKEN THIGHS
One Tin Chicken Thighs
Ingredients
- 2 tablespoons of oil
- 2 tablespoons of parmesan (plus extra to garnish)
- handful of shredded fresh basil
- 500g boneless chicken thighs
- 3 garlic cloves (crushed)
- 200g of boiled baby potatoes (I used leftovers from my salad night so even less prep!)
- tenderstem brocolli
- handful of panko breadcrumbs
Method
- Heat the oven to 180 degrees. Put a oven proof roasting tin into the oven with the oil.
- Put everything in a bowl except from the breadcrumbs and mix well. Take the hot tin out of the oven and carefully put everything in, sprinkle with the breadcrumbs and extra parmesan and put it in the oven for 30 minutes. That's you!
