Guinness beef Stew Classic

Ingredients

ESSENTIALS

  • Diced beef

  • Guinness

  • Beef Stock

  • Garlic

  • Onion

  • Carrot

  • Celery

  • Flour - to thicken the sauce

  • Tomato Paste - for extra flavour

EXTRAS

  • Potatoes

  • Thyme and Rosemary leaves

Tools used

  • A sturdy cast iron / stainless steel pan

Story

Grass Fed Diced Scottish Beef & a lovely Guinness Stout, carefully prepared and slowly cooked for a stew to remember.

Instructions

Brown the diced beef well, this is key to flavour.

Sauté – onion, garlic, carrots and celery, Rosemary leaves & Thyme, all chopped/diced plus Tomato paste.

Add liquids – beer, broth and herbs;

Simmer covered for 2 hours until the beef is pretty tender, then simmer for a further 30 minutes uncovered to let the sauce reduce a bit and for the beef to become “fall apart tender”.
